Avocado and egg may sound like a strange combination, not to mention baking avo. At first, I was a little sceptical. However, both these ingredients are tasty and nutritious so I decided to give it a go. A pleasant surprise, to say the least, because this easy Baked Avocado Egg Breakfast is one tasty way to start the day!

This is such a simple and nutritious meal. Even if you aren’t 100% sure you’ll like the combination, just give it a go anyway. Even if it turns out to not be for you, you would’ve pumped your body with nutrients in the process of finding that out. No harm in trying.


Tips for making the perfect Baked Avocado Egg Breakfast:

After making this breakfast, here are some lessons I learnt along the way:

Tip: Break your eggs into a separate bowl, instead of directly pouring them into your avocado halves. This way, you can add the egg yolk first, and then keep adding your egg whites until it fills up.

Tip: If you’re a meat-eater like me, sprinkling some crispy bacon over the top at the end adds a lovely touch.

Tip: Some recipes suggest adding your parsley and onions before baking, but instead add them fresh at the end. This will add extra freshness to the dish.

Tip: Eat with a spoon right out of the avo half. Yum!
