Wonderful Walnut Egg Banana Cake Recipe

Looking for an easy and healthy treat? This Walnut Egg and Banana Cake Recipe could be just for you! This recipe only has 3 ingredients (with 2 optional extras), is easy to make, delicious and nutritious, need I say more? Happy baking!

Yields1 Serving
 3 Ripe Bananas
 2 Eggs
 40 g Raw Walnuts (1 big handful)
 0.50 ml Vanilla Extract (a couple drops) (Optional)
 0.50 tbsp Cinnamon powder (Optional)

Heat oven to 240°C

Add bananas (peeled and chopped into big pieces) and eggs into a bowl, and blend. A hand blender works well. Or, if you don't have a blender, just use a fork and then a whisk by hand. Blend until the mixture is smooth and there are no lumps.

Optional: Add a couple drops of Vanilla Extract, and blend again.

Optional: Put 4 Walnuts to the side to add on top of your cake later. Lightly break the rest of the raw walnuts with your hands, and stir gently into the banana-egg mixture.

Grease the inside of your baking dish with spray, butter or oil. This will prevent your cake from sticking to the bottom.

Bake in the oven for 10 minutes on 240°C.
After 10 minutes have passed, quickly open the oven and place your 4 walnuts on top of the cake for decoration and extra crunch. Quickly (and carefully) put it back in the oven.

Turn down the oven to 180°C and bake for another hour.

Take your cake out of the oven and let it rest. Then... tuck in! Yum!
